I have been trying to learn how to make cheesecake well. It can be had in this city 24/7, probably better than I can ever make it, but it was something that I wanted to learn. And I figured a ramekin sized cheesecake has a sort of built in limit. You are not going to go on a cheesecake bender and eat a whole full sized pie.
But that is not why I bought the ramekins. No, nor is quiche, or pudding or jello or soup. No. I bought them because I love the word. Ramekin. Just love it. And I wanted to have the thing that is called that living in my house. It is just the sweetest word. It makes me want to adopt a rodent and name him ramekin, and make up Beatrix Potter stories about him.
But now that I do have them, they are good for making itty-bitty pies.
Today-- apple. I had left over crust from a pumpkin pie earlier in the week. So I was ready when son said his gf accidentally picked 40 lbs of apples, (18 kg,) and would we like some.
So I have 6 clever little apple pies, with nutmeg and sugar, baking away. And I used up some of the apples that we bought the very day before we took hers!
