Justified Ramekins

Early this summer I bought eight pyrex ramekins.

I have been trying to learn how to make cheesecake well. It can be had in this city 24/7, probably better than I can ever make it, but it was something that I wanted to learn. And I figured a ramekin sized cheesecake has a sort of built in limit. You are not going to go on a cheesecake bender and eat a whole full sized pie.

But that is not why I bought the ramekins. No, nor is quiche, or pudding or jello or soup. No. I bought them because I love the word. Ramekin. Just love it. And I wanted to have the thing that is called that living in my house. It is just the sweetest word. It makes me want to adopt a rodent and name him ramekin, and make up Beatrix Potter stories about him.

Dorky, right?

But now that I do have them, they are good for making itty-bitty pies.

Today-- apple. I had left over crust from a pumpkin pie earlier in the week. So I was ready when son said his gf accidentally picked 40 lbs of apples, (18 kg,) and would we like some.

So I have 6 clever little apple pies, with nutmeg and sugar, baking away. And I used up some of the apples that we bought the very day before we took hers!

I find ramekins slightly intimidating, primarily as I am an extremely unenthusiastic cook. I'm afraid in my house ramekins are more likely to be used for olives to accompany G&T :}

Having said that, I agree that Ramekin is an adorable name for a rodent. He could make friends with your imaginary hamster Chloe, who will be going in the post first thing tomorrow morning.

Oh, and I would happily cross the atlantic for one of your apple and nutmeg pies :)

I wish you could sit here and eat one. You could admire my imaginary rodents.

The good thing about apple pie is, you always feel it is somehow good for you. (An apple a day, after all.)

I also like a good G and T! I think a ramekin of olives would be snapped up around here before it ever met the gin though...

One of these days we'll make it happen! You can make the apple pies and I'll bring the gin :)

I could say creme brulee or creme caramel but really, what I use ramekins mostly for is to form couscous into a neat shape before upending it onto a plate to serve. Makes the dish look ever so slightly more elegant. (sad but true)

I have a nice collection of Pyrex glass bowls that I could do that with!!What a good idea! I also use my little bowls on Saturday "Beans and burgers" night. I hate for my beans to make my burger bun soggy, so I put them in a little bowl;they stay hot, fit on the plate and bun stays dry!! A side of applesauce with pork or cranberry sauce with turkey/chicken works well, too. Bon appetit!
